We have placed pressure cookers and canners in the same category. However, Pressure cookers and pressure canners are not the same, and the difference is important to know for food safety. Some pressure cookers can be used for canning and some pressure canners can be used as cookers.
Pressure cookers are used for cooking foods quickly. They come in a variety of sizes and are more like the size of a large saucepan.
Pressure canners are designed for processing vegetables, meat and fish, for storage in canning jars. They are often much larger and more importantly canners have an accurate way to measure pressure. It should range from zero to twenty-five pounds and can be a gauge or a weight. There should also be a way to calibrate the device for accuracy.
